indirect 240, with an internal temp of 185. I used Ribit Rub from fred's music and bbq....no sauce.

Very good, but they weren't the fall off the bone I was expecting! Any thoughts as to why? They were cooked indirect at 240 with an internal temp of 185

How long did they cook? You could try foil for the last hour.Some like it some don't.

To get fall off the bone ribs you need to foil them for about an hour to an hour and a half. The problem with that is, the meat tends to get mushy. The 3-2-1 method works well for most. 3 hours of cooking at 225, 2 hours of cooking foiled ribs with beer, broth, aj, or.. then unfoiling and cooking 1 hour on rack(while spritzing) to firm up meat during the saucing period. Alot of us have started to skip foiling and just spritz. They won't fall off the bone necessarily but they will still be very tender. There are many variations of cooking ribs. Practice is what really works with ribs, because you'll find what works best for you.

A good rule of thumb is that an inch (give or take) of the bone tips are showing when they're done. It's worked every time for me. I don't foil any more either, and it saves a lot of effort. I spritz with half cider vinegar and half apple juice according to Car Wash Mike's directions. Here's the link:

They look pretty darn good to me! If you and the family like them that's all that matters.
The best part of all this is you get to keep trying... and testing/eating.
I like them a little moist.

Got to agree with the others they look good. Along with the other advice some ribs just arn't as tinder as others and as said: practice! But thats the fun part!

they look great. i do foil mine the last hour with a touch of butter.
cook them often and they will get better every time!
