Smoking a whole Alaskan Coho Salmon.
Sams in Northern Ohio is selling whole Coho Salmon at $2.72/LB. I just bought 2 of these and fillet one for tonights dinner. However by deboning the salmon I lost a lot of good meat, probably 30%.
My question to the forum," Has anyone smoked a whole salmon with the bone in it and how easy is it to remove the bones after the smoke?

hollanddutch,[p]Done a number of fish whole and otherwise, with bones and without. Cooking a whole fish is easy and as far as the bones go you shouldn't have any problem at all. The flesh will seperate from the bones really very easily when it's cooked. I can find the front end of the backbone (if the head isn't on) and lay it open and the backbone will come out like a zipper. Hard to describe here. Good luck!

Filleting is the way to go but it is something you need to do once and a while to get descent at it. Here is a site that will help you get some of the techniques.
