B.A., they are the "waxy" type unlike the Idaho. Any recipe for new (red) potatos will be quite fine. They fry very well.

probably too late for this cook, but in the futre try this with yukons:[p]cut them into small squares. . .[p]coat liberally with olive oil, kosher salt, dizzy pig ragin river (or garlic and rosemary). ..[p]bake at 425 for about 35 minutes turning once or twice. .. .you can do this in the oven or the egg, they are excellent
