Cooking with seasoning?

Unknown
edited November -1 in EggHead Forum
I noticed that alot of recipes and eggers use pre-mixed seasoning like Dizzy Dust, etc. Can you cook the food without these, and still have it look and taste just as good on the egg, or are these seasonings part of the eggs' secret? [p]

  • G-man,
Ready made seasonings offer alot of flavors and a convenience of not having to run to the grocery store to get something thats missing from the pantry.Ready made seasonings are usually thought out processes of different ingredients that compliment each other. But I for one can say that just plain salt and pepper will work as well. And whenever you have time to play get all your favorite flavors of spices, herbs, salts, and peppers, and try making your own version, add a little of this and a little of that, keep accurate measurements of what your using to make up your recipe and you'll find something you really like. Then when its time to cook on the egg 1/2 your battle will have been accomplished, THE RUB is done.
    Good Luck and keep smokin.

G-man, in a word, "no". Spices and rubs give flavor to your cooks and the flavors are all quite different. I can cook salmon on the BGE with nothing on it and it is quite good. But when I use Ragin' River Rub as part of the Maple Crusted Salmon, it's better. And if I use Tsunami Spin, it's different and it's better than with nothing. And if I use Gilded Splinters, it's different and it's better. In short, the spices improve the flavor and make it better. Back in the Middle Ages, people used spices to mask the flavor of the meat. Now we use it to enhance the flavor of the meat. Even if all you use is salt and pepper, I think you will agree: spices add to the flavor. Spices plus the BGE give you a combination that's hard to beat.
