First, I hope everyone on the other coast is O.K. I feel for all the are having a hardship.[p]
Tonight's dinner,
A small sweet potato rub with olive oil, cooked for about 30 min. around 450° (started at 350° but the temp went up so I went with it)[p]I cut off about 6 to 8 inches of the small end of a pork tenderloin, coated with Dizzy Pig's Jamaican Firewalk. Cooked for about 12 min. between 450° and 500° and dwell for a few min.[p]Crispy on the outside, melt in your mouth tender. I had used a small chunk of wood that I had sitting outside, probably pecan but am not sure.[p]I took a small piece to the neighbors, it was great for the wife but a little smoky, the husband thought it was great just the way it was.[p]Cheers,
