Works very well with chicken and pork.
A kind and generous fellow egger whose wife coincidentally makes the world's best blackberry-fig preserves shares a few sticks with me from time to time. Very mild and sweet wood, similar to bradford pear

Dunno Hoss, I never add any wood to fish cooks.

I've only used alder.

Hickory is great for mullet.
