Pickled jalapenos

Ginny (Mint Tulip) and I picked some of our jalapenos this weekend and tried our hand at making pickled jalapenos. Ginny makes great sweet pickles so we used her sweet pickle recipe and used our jalapenos...here is a picture while they were sitting in the pickling sauce ...they got cooked for 35 minutes and then put in jars...they are terrific...the sweet & hot is really tasty

    those look great; tell me, how do you judge when your peppers are ready to harvest. mine are close, but I'm not quite sure when to pick.

    Here is a recipe we use to make Sweet Cucumber Chips...I just substituted the jalapenos for cucumbers.

    Ingredients:

    7 #'s of jalapenos or pickling cucumbers
    2 cups of pickling lime
    2 gal water

    Mix lime and water thoroughly then pour over jalapenos...soak for 24 hrs...then drain & wash off lime...cover with fresh water and rinse...change the water every hour for 3 hours...then drain

    In a seperate container mix 5 lbs of sugar, 7 cups of apple cider vinegar, 1 cup water, 1 small box of whole pickling spice (tied in a bag), 4 sticks of cinnamon, 2 tsp salt, bring to a boil and pour over jalapenos and let stand overnight. Then cook for 35 minutes at a soft boil. Wash the jars and put pickled jalapenos in jars & seal. Seal jars & turn jars upside down to set seal. Let sit for 24 hours. Then eat & enjoy.

    Hey Kim, I picked some peppers today and pickled them. Bananas, jalapenos, cubanellas, Anaheims, and some little oriental chile that is only 1/4" long and hotter than hell. I did some several weeks ago and we had them on some burgers, really good. A lot like pepperocinni. -RP

    this will sound like a smart aleck response, but pick them when they are the size you find in the supermarket. having said that, jalapenos, like bell peppers, turn red when ripe. i think they have a sweeter flavor when ripe. if you have enough plants, try holding off picking some of the jala's until they are red-ripe and see if you like the different taste.
