    smokemaster,
I recently smoked (indirect) a whole prime rib. [p]It weighed 17 pounds & cost $103.80.[p]I coated it with rub. There are so many rubs on the market that mentioning a specific one is useless. My family prefers a particular local brand & I use it for everything.[p]The internal temp was 40 when I put it on. I smoked it at 225. I took it off at 130 & wrapped in in film 905. I always hold my products in a styrofoam cooler. After 2 hours (the guests were late) the internal temperature rose to 140. [p]During the 4 hour smoke, I misted it (every 30 minutes) with my usual apple juice & olive oil. [p]My family says that it was pefect.[p]I always buy & cook products with "bone in."[p]References indicated that "bone in" takes longer to cook so I was surprised at the short time of 4 hours.[p]No salt or pepper on any of my products.[p][p]

  • smokemaster,
i like to rub a bone-in prime rib all over with garlic and heavy dose of herbs-de-provence. . .set up drip pan on inverted plate setter with raised grid. . .get egg up to 500 degrees. . .put the roast on the grid bones down. . .immediately start to bring the dome temp down to 325. . .let stabalize there. . .cook till done (135 internal to get medium rare - temps will continue to rise while it rests prior to slicing). . plan for about 20 minutes per pound. . .you get a nice herb crust. . .

  • smokemaster,[p]My Butcher took a 6 pound Prime Rib roast, coated it with chop garlich, parsley, black and red pepper, a little kosher salt and red wine. He then vacume sealed it for me and it sat in our fridge for about two days before I got around to cooking it. It just sat and soaked up all that wonderful red wine and seasoning![p]I cooked it at about 350F until it was 145F internal temp.[p]It blew everyone's socks off, and they said they will never look at Prime Rib at a wedding reception the same way again![p][p]
