Brisket Ready? Help please

Ok. I put this 8 lber on at 6.5 hours ago. It's internal is 165. I want to serve this tomorrow. Should I pull it off now or wait a bit? Was thinking of wrapping it if foil with Beef Broth and/or Apple Juice.
Re-heat tomorrow? Not sure. When to slice?

  • you're just in the plateau. ...if it was mine, i'd wrap it now....TIGHT. .. put it back on the egg... let it run out to 195. ..then pull it and let it rest for an hour or tow. ...then into the fridge over night. .. tomorrow, warm it up, still wrapped tight in a 300 degree oven for about 45 minutes. ...pull it out of the foil (make sure to reserve all the juices in the foil). ..slice it, then put in a pan with all those good juices poured all over it. . .oughta be good .. ..

    thats what i'd do . . .

  • curling team!!!. . ..i always wanted to be a 'curler'!! . .any sport where you get ready by sitting around a bar sounds like my kinda sport....i even found there is a curling rink up in maryland about 45 minutes from my house that has "intro" sessions during the year. . . just haven't had time to fit it into my schedule . . .i think i'd be a good 'sweeper' though. ...

    Ya Curling in Maryland. Potomic Curling Club I think.
    3 of 4 on my team are egg heads. We gotta work on that fourth guy tomorrow. You are absolutely correct...Curling is a Drinking Sport. Best part about getting together this time of year is the only ice we use...goes in our Drinks!
    Here is the deal...you come up for NiEGGaraFest and I'll take you over to the Curling Club for a lesson or two. (I'll even Drive!...so you can drink!)
