Keeping Temps Low?

Hey all!

Just got my BGE a week ago, been using it every couple of days, and I have a small problem that I need to correct.

I have trouble keeping the BGE in the "low and slow" range of 250ish degrees. On my most recent cook (still most definitely learning) I was able to keep the temperature at ~240 until it came time to check the temperature of the chicken. Once I did that, it spiked and climbed to over 300 degrees.

I'm hoping to do a Pork Butt tomorrow, and I'm typically a fan of rubs with sugar, so I want to make sure that I keep the temps under 300 for at least the majority of the time. How do you guys roll when keeping temps low?

One thing I've yet to figure out is the top vent. If you're aiming for low temps, where do you set it? I was surprised that I seemed to have more luck keeping temperatures low when the top vent was open than closed, I guess an insulation issue? Also, if you guys are doing low&slow, how "closed" do you keep the bottom vents? Last time I was cooking with it just barely opened, but I don't want to strangle the fire.
