Ribs and Blackened Chicken question>

Ribs. I'm cooking ribs for the Chiefs-Steeler game. Since we can't get in until 9 and the game is at noon, I'll be cooking Saturday. Any good suggestions on keeping moist for Sunday. Should I wrap in foil immediately after pulling off? Or is there a good reheating plan? I plan on saucing them at the game.[p]Blackened Chicken? Has anyone ever done this on the egg and how.[p]Thanks,

Car Wash Mike, I use Paul Prudhommes Blackened Steak Magic for meats and fry the chicken after coating it with the spice in butter in a cast iron pan. You could do the same if the pan gets real hot by the egg. The left over butter and spice can then be turned into a real nice sauce.

Car Wash Mike,[p]I have always done ribs @ JETS games, but due to 9/11 security forcing us to leave for our seats earlier I smoke them on sat like you will do. I simply reheat them on a small charcoal grill at the tailgate, and never had any complaints. If your worried about moisture then reheat them in foil to retain the moisture. Plus as they say about next day smoked ribs they are always full of smokey flavor!

Blackened Chicken Breasts
You can do it !!!
season chicken with favorite rub, dip in melted butter or margarine, then do the TRex method, just do 3 or 4 breasts at a time so the fire generated from the butter doesn't get out of hand. The only thing you don't need for the chicken is the rest time, I would not go higher than about 550 degrees though, you don't want it burnt or scorched, you want a crust but need the chicken cooked.[p]Good Luck CWM

Sure took us a long time to figure this out..but when we did..it sure made gramma happy..although grampa seemed a bit upset...poppa says..sometimes..it's the simple fix what makes the most sense.[p]I remember it well...it was a real hot summer..and we was all out in the corn field pickin ears of corn..even cousin Billy was with us..although truth be told I think only reason he decided to come was..he was worried Beulah wasn't pickin corn the right way..cause he sure spent a lot of time watchin her pick them corns..I think he was waitin fer her to pick one what wasn't the right size..but then I seen her pick a really small one..one what really wasn't right for pickin..and I thought then Billy was gonna go over there and have a talkin to her..but all Billy did was mumble to himself..and then he got all weird and his eyes glazed over and what not...and then two minutes later he plum left. I told momma Billy really autta not help us pick them corns..if'n he thinks Beulah's not doing it right..but all momma said was maybe Billy was upset cause Beulah was doin too good a job..but I told momma..I didn't think that's the case at all...on accounta Beulah had to use two hands on that last small corn..and way she was pullin on it..she was lucky that when it finally let loose..it didn't plum hit her square in the face and knock her out. Sometimes momma don't wanna hear how bad of a corn picker Beulah is..I can tell you that.[p]Anyway..gramma don't help us pick them crops no more..on accounta her knees done gave out..so she was the one..what on hot summer days...would go around with a milkin pail full of cold creek water in her right hand..and mommas prized store bought soup ladle in her left hand..and she woould coem round to each of us..and pour water over our heads in order to cool us down some. Problem was that..from years of carryin that heavy pail of creek water..them fingers on her right hand sure were kinda stretchin out a bit. Gramma sure didn't like this..although grampa seemed pretty happy bout it...I think maybe..judging from what little I heard grampa say to poppa..grampa thought maybe gramma would have an easier time tuckin in the sheets..what with them long fingers and all.[p]Gramma sure got tired of carryin round that milkin pail full of cool water..till one day..she done had an idea..and as we was all out pickin corn..she done came runnin outta the house..some kinda weird dirty yellow hat perched atop her giant cranium..and she told us all to look...and as we stood there..some holdin ears of corn..some not...we watched as she paused for a minute..a great triumphant look on her face..and then..with her elongated right hand..swatted herself on the top of her giant cranium..and we all heard a sickly wet sloshing noise..and slowly ..water trickled down her face..crossing over her giant smilin lips..and onoe by one..we all realized that..perched atop her head..was poppas prized loofah..and although we realized that maybe we all didn't want this particular loofah coolin us off...we all clearly realized the significance of grammas invention....and a great whoop of joy was heard...and we all dropped our corns..and ran up to hug grammas...although careful not to get poppas prized loofah juice on us. The look on grammas face was pure joy.[p]Now..in the middle of crop pickin season...we can all be seen... out in the hot summer sun..with them dirty yellow hats perched atop our giant craniums...pickin them corns.....and every now and then..gramma would come around..and you can hear the wet slappin noise..as she would reach up..and swat us each in the head with her elongated right hand..and you can hear a sigh of relief..and the sound of the cool creek water tumbling down our bodies...[p]
