Have you ever had pickled okra? How do you feel about rubs with a heavy Southwestern influence? Made with cilantro, cumin,chili powder, etc?

    Heard she may have a mango hangover. Here is one we have done for years.

    Pickled, Okra, Marsha


    INGREDIENTS:
    5-7 Pint Mason Jars
    5-7 Cloves Garlic
    5-7 Dried Peppers
    5-7 Tsps. Dill Seed, I each Jar
    2-3 Lbs. Okra, Fresh, Whole
    1 Quart White Vinegar
    1 Cup Water
    1/2 Cup Salt




    Procedure:
    1 Place garlic, hot pepper in the bottom of clean, hot pint jars. Pack firmly with clean young okra pods from which only part of the stem has been removed. Stem end must be open. Add dill seed.
    2 After packing jars, bring vinegar, water and salt to a boil. Simmer about 5 minutes and pour while boiling hot over the okra.
    3 Seal the jars immediately and treat to water bath 15 minutes. This mixture will make 5-7 pint jars. DO NOT USE SALT MIXTURE REMAINING TO DO ANOTHER BATCH, START OVER.
    4 Let set on shelf for 2-3 weeks before using.
