Lunch dish for the office today

Morning All:

We had a potluck for lunch today at the office as one of our admin people is retiring (enjoy it Pam). Since the "theme" of the lunch was Hawaiian I made "Hula Chicken" from a recipe EggHatter had stuck away in one of her many recipe collections.

Had a package of boneless/skinless chicken breasts (total of 14 if I remember correctly)...these I grilled direct on a raised grid at about 350 dome temp, after brining and with a liberal coating of Pineapple Head, right after going on with some Guave Wood for smoke...

While these were getting happy, I mixed the juice from two cans of pineapple rings, some lime juice, honey, soy sauce and cornstarch together and let the rings get happy in that for a few minutes...

Once the chicken was done (no pic), the pineapple went on the Egg for a couple of minutes to grill & get some carmelization...

While the pineapple was getting happy, I cut the chicken breasts in half, put them in the sauce and then topped with the rings, finished pan...

It must have been liked as I didn't have any leftovers!

When I added some lump to the Egg this morning, I found what is by far the largest single piece that I have run across in 7+ years of cooking on the Eggs. This piece of lump is laying on the large grid (18" diameter) to get an idea of how large it was...

Also late this afternoon EggHatter looked out back and found another "visitor" in the back yard...

The pan he is laying in is a 9"x13" pan so you can see he is a pretty big turtle. We think it is the same one we saw a few months ago that got very angry when we approaced it. This time he just was taking a nap in the water.

    Since it was a potluck I really didn't think about sides, but any rice dish probably would go good with it. Someone did bring some yellow rice (and black beans) that was good with it.

    It was nice having people stop by the office all afternoon to tell me how much they liked the chicken!

    When I felt the piece of lump in the bag I thought it was big, but didn't realize how big until I dumped it into the Egg.

    If it is the same turtle we saw a few months ago, I don't want to get close enough to try and pick him up. He was actually "hissing" at us last time and I do believe he could bite through a finger if you were silly enough to get too close.

    LOL... Yup, the turtle can take a chunk out of a finger. I am living proof. I have a nice large scar from a turtle bite. I keep my distance.

    I have to get some pinaple head seasoning and give this cook a try.

    When I saw the picture I wondered how using a hot rub on the chicken with the pineapple on top would turn out.

    It is my turn for a family cook coming up and those pictures look like that is just the ticket.

    Beautiful cook! I followed a turtle that had a head as big as a tennis ball across my back yard while cutting grass last week. He was moving from one pond to another :ohmy: Quite a site seeing that big guy sashaying it across there :huh:

    Enjoyed your Shrimpburgers; will have to give this a try too. I'm with you on the charcoal...all Spring every bag was mostly little pieces then..

    This in a large. After dumping them out I picked them out and saved for a long slow cook.

    Turtle... 350 indirect until about 160 internal should do it. :whistle:
