Sounds gross, but...
I got a tip from one of my buddies who owns an egg for a recipe for salmon steaks. It was SOLID! Here goes:[p]Take salmon steaks with the skin on one side, and liberally rub with Tony Chachere's Creole seasoning. Next, make a mixture of approximately equal parts mayonaise and soy and whisk until you get a texture that is slightly less thick than a milk shake. I also added some Asian chili oil. Cover the salmon filets with the mixture. My wife and I used a six inch long strip of salmon, and cut into individual steaks/filets after cooking. Get the fire to 350, use plate setter with feet up, drip pan and a lot of alder (I used alder smoke pellets which kicked up one heck of a smoke). Place salmon on grill for 30 minutes. Take off of the egg, and the skin removes very easily... I just slipped a grill spatula in between the skin and meat and it came right off. My wife who hates salmon, but likes fish, raved that it was the best fish she'd ever had! I highly recommend the recipe, and I plan on making it even better with a little more tang. Smoke is the key. The outside had a nice brown, glazed appearance. Don't know if he stole this recipe from somewhere, but it was great.

bc,[p]I'm not a big mayo fan... so mayo and soy didn't sound good to me. But, it kicked a@%. I am thinking of adding some freshly grated ginger and some sort of chili peppers to the marinade just to give it more body. However, as it was it was great.[p]Regards,

B.A.,[p]I've never cared much for mayo either, course lately I've determined mayo and "Miracle Whip" are not the same. LOL[p]Also, when cooked, mayo is little more than adding a bit of oil to whatever you're cooking.

Pakak,[p]I am not a mayo fan either, but I did a mayo, mustard, and dill recipe on salmon the other day that was fantastic.
