    Hot tubbed for 1 hr
    seasoned with Montreal Spicy Steak Seasoning
    Seared @ 600° about 90 sec/side till 120° internal

    Every one has there own way of cooking steaks. I for one do not use the TRex method. I think for thick steaks it is probably the best but none of my steaks are that thick. Most of my steaks are about 1" to 1 1/2" thick and recently have been Rib Eyes, Strip steaks and London Broil. I heat the egg up to 400º to 500º with the grid low on the fire ring. I give the steaks two minutes to a side and flip. After both sides have had two minutes I flip again and rotate the steak 1/4 to 1/2 turn. This not only gives me good grill marks but if my fire or steak are irregular in shape the steak will be more uniformly cooked and less chance of one end being more done then the other. Depending on the thickness of the steak and/or how hot my fire is I give them 30 to 60 seconds more per side. At this point I pull the steak and check the internal temperature. I like my steaks between rare and medium rare and look for an internal temp of about 122º. I cover the steak with foil and let it rest till I am ready to eat, typically 10 to 15 minutes.
    This way I don't have to change the temperature of the egg and I don't have to take the steak off and put it back on again. I just find it easier this way and the results are very good.
