Another lesson learned, but a good one. Sunday I did my first pork butt - 8 1/2 pounds figuring I'd loose 40% during the cook. Gave a pound plus to the inlaws and on the third day made enchiladas with our leftovers. The remains of the pulled pork is down to 1 1/2 enchiladas. :pinch: Now I know I never see a lone butt cooking on everyones posts. Lesson learned, two or more from now on.

Looking good. We did the same thing on Sunday with leftover beer butt chicken. It was good stuff.

That is a good lesson learned. Those look really good and I'm doing butts this weekend. Do you layer the tortillas with sauce and fill and roll after?

I go for leftovers too; I just thought I'd get more than three days worth. Yes, homemade sauce, good and easy. It's one Rod posted recently. I've used one cup of tomato sauce (this time one small can of tomato paste) in exchange for one cup of water and hold the chili powder to 2 1/2 TBSP. Not because of the heat, but so it's not too strong. Don't think I'll ever buy sauce again, just keep tweaking this recipe to my liking.

Exactly....tortillas in a wet paper towel, nuked until they were warm, then dipped in the sauce and piled in the dish. I didn't worry about covering all of the tortilla with sauce and let some drip off; it's plenty. Filled and rolled from there.LBGE Katy (Houston) TX

We sautee minced onions and put in with the meat and then mix it all with enchilada sauce. Roll each tortilla in more sauce, fill with meat onion mixture, roll and place in pan. Pour more sauce over the top & cover with cheese,black olives & jalapeno slices. Then we cook it on the BGE at 350 degrees for 40 minutes. -

Enchiladas look great11,As long as your fire is going I always cook at least two if not four butts.We will vacuum seal and have 4 nights of Ench's,Tacos,breakfast or sandwiches.
