Yesterday I got up about 6 to get the egg going, put the S. Louis spares on about 7, used one chunk hickory and one oak for smoke.
Gave the ribs a bath overnight in Carnivore Chipolte sauce and Jack Daniels. The morning I put some mustard, D.P. Swamp Venom and Jamacian Red Eye on em. Cooked em about 6 hrs, I did foil em for about 45 min., also spritz every hour, 50/50 apple juice and apple cider vinegar.
Brought em to one of the Ladies at the pub, never tried one and she took em home. She's not working tody, hope I didn't kill her off. Oh, Sauce at the end with the Carinvore Chiptole. Only one pict. I think the rest of the Jack I was drinking had something to do with that.

I should have tried them first but can't even think that were not at least good. The pict. was only part way into the cook, my Jack kicked in so no more pictures. :(
I have one more to do for the other Lady, maybe tomorrow or the next day.
