4th of July dinner

Well, don't get me wrong, but it was really just another saturday for me that happened to also be July 4... 
Dinner was awesome especially since we acoompanied each course with all-mexican wines:
The menu was:
Octopus salad with rosemary potatoes, spanish spicy chorizo, herb sauce.
Corn soup with glaced pork belly ravioli and roasted bell peppers.
Sauternes poached (and then lightly grilled) foie-gras, with pickled cherries and arugula.
Grill-seared-roasted seabass with artichoke ravioli and saffron-vainilla sauce.
36-hour sous-vide / high temp seared short ribs, bone marrow crackling, oyster mushrooms, bordelaise glaced cipollini onions.
Kit-kat ice cream, pistachio britlle, ricotta filled-chocolate/peta zeta (the candy that pops in your mouth) covered wafer.

Thanks! the wines were actually surprisingly good... I like the idea that mexican winemakers are starting to producre more and better wines nowadays that compete and win oaver old world wines...
