Stuffed pork loin

Mint Tulip (Ginny) had a small pork loin leftover from camping. Tonight she did a "C" cut on the loin and flattened it. She then stuffed it with leaf spinach, feta cheese, La Bomba and pine nuts. We also rubbed it with DP Shakin' the Tree. I baked vidalia onions and the loin indirect at 375. Here are a few pics:
