Stuffed pork loin

Mint Tulip (Ginny) had a small pork loin leftover from camping. Tonight she did a "C" cut on the loin and flattened it. She then stuffed it with leaf spinach, feta cheese, La Bomba and pine nuts. We also rubbed it with DP Shakin' the Tree. I baked vidalia onions and the loin indirect at 375. Here are a few pics:

Anne: It is hard to explain but you start at an edge of the meat and slice it length wise to make a C. It just sort of rolls out. I'm sure if you Goodle it you can find a video on how to do it. Isn't there a video on everything on the internet? :silly:
