I also picked myself up a new toy from Home Depot. I love using the torch to light the egg  . I was using newspaper and a chimney but I got tired of the ash flying around...

    Doug,

The chicken looks great and you will love the torch. We had some beer butt chicken left from camping and we made chicken enchiladas today for lunch....

    Doug,

Try the peach sometime when cooking chickens. Glad you liked the Maple.

    Tom's cobbler recipe:

    [ul]Fruit Cobbler[/ul]

You may make this basic dump cake recipe to make any fruit cobbler you wish. The one I made at the Eggtoberfest was ½ blueberry & ½ crushed pineapple. If you make apple, add some cinnamon to the apples.

    Ingredients
    2 quart Dutch oven
    4 cans blueberries
    4 cans pineapple
    2 boxes cake mix
    2 sticks butter

    Procedure
Pour the fruit in your Dutch oven, Use as many cans as you wish depending on what size
oven you are using and how much you want.
Spread evenly over the fruit a dry plain white cake mix. If you use more than four cans
of fruit use two cake mixes or if you just want a lot of crust.
Melt a stick of butter or margarine for each cake mix and pour evenly over the mix.
For the pineapple/blueberry I sprinkle it with shredded coconut.
Cook at 350 for approx 45 minutes or till the cake looks browned on top.
The fruit and its juices with thicken and bubble up through the cake mix.

To make it with fresh peaches I would cut it down to one box of cake mix and one stick of butter. I would slice enough fresh peaches to cover the bottom of the dutch oven and add a little sugar to them.

Would you do the same with fresh blueberries? I have a free source of fresh blueberries close to my house.

i would probably cook some of the blueberries in a sauce pan with some simple syrup to break them down - maybe even lightly mash them a couple times - to add some body and some sweetness. Then add that to the fresh berries in the bottom of the dutch oven, then top with the cake mix and melted butter.
  • I have a new found love for chicken since the Egg came along. Nice cook. :)
