4th of July feast

Had the egg now for 15 days and I've managed to cook on it 10 of the days-went through my second bag of lump too. So for the 4th had some family over and a few of them were eggskeptics. I decided to cook spatchcock with some ABT appetizers and some foiled onions with the birds.

Used jalapenos and Anaheim and banana peppers; stuffed with crab, crab and sausage, and cream cheese, wrapped with bacon. Cooked on the top rack of the rig. First time cooking these guys and not the last-outstanding! Dusted them with various seasonings prior to cook. For the main course, I did three spatchcock chickens and foiled onions on the side. Used the adjustable rig to get it all done-two birds on a lower rack, one on top with the onions. Note to self-spray racks with pam. Two lower birds finished before the top one, but no problem-just rotated it down. In addition to the plate setter, the rig is one of the most used accessories for the egg. Lot of food and an easy easy cook-should've taken pictures of the cook but pretty busy. Spatchcock was wonderful-eggskeptics couldn't believe how moist and juicy the chicken comes out-and how simple it is to prepare.
