Brisket @ 250

So... I got up at the butt crack of dawn to get my 10# brisket started. Seemed like recommended temp is around 250? I've been having a real hard time keeping the temp stable. I've already had the coals go out. Is it suppose to be 250 dome temp or something else completely?

250 dome is good, a little lower is o.k. also, do not keep messing with the egg she will stabilize. You can always bump the temp up in the end to finish it off, if you get in a hurry
