Finally, XL is put together.

After almost a month and a half my XL is finally put together. After a couple of screw ups it is ready for action. One issue is with the wheels set-up the height of the table is now 39" and the EGG another 3", it makes it a bit high. Now I have to make a stand for myself. I am only 5' 7".

Any thoughts ? Also need to calibrate thermometer. The needle is at 100. Do I turn the needle to zero before I calibrate ?

Also, instead of doing spatchcock chicken, maybe chicken wings. They can be transported for a family get together. No ?

  • My thermometer never goes back to air temp after a cook.

    I calibrate before major cooks and it is generally with 5 degrees.

    I use my digiQ II often and do not rely on the dome temp except for confirmation.

    Boiling water and then adjust.
  • The thermometer measures the air around the tip. The temp in the egg can be 100 degrees. My guess is wherever you are it is at least 80 degrees, and if the sun is hitting your egg it is hotter in the egg. Put the tip of the therm in a pot of boiling water, if needed turn the nut on the back til it reads 212. If you are way above sea level go to "cookbook" at the top of this page and click on "boiling point."
