I've had my 4.53 lbs brisket on for 8.5hrs now with a somewhat steady 245 dome temp and the brisket is still on 170. Am i doing something wrong? should i be looking for 180/190 meat temps or something lower?
Thanks!!! Don't want to screw up the last 8.5 hours!

It's still in the plateau. It will come out pretty soon.
-
Well that makes me feel much better! Although the hungry crowd behind me is not as happy! Is it common for these things to run longer than 1.75 hrs/lbs?
-
keep the lid closed and let it cook, it will come out of the plateau soon, I'd go to at least 190 degrees and wrap in foil and towels and let it rest in an ice chest for at least one hour once it comes off
-
you add 15 minutes to cook time everytime you lift the lid, let it work its magic
-
Wrap it in foil, bump the dome temp to 275, and it will finish really quick. Keep an eye on it.
