Pork Chops

Picked up a couple of thick pork chops today. Thought that I'd try the TRex steak method of cooking. Has anyone tried this ?

    Pork chops are great on the egg. I use a light brine overnite. Heat egg to 800* and sear chops about 5 min. to the side. Take off grill and cool egg to 350*-400* put redi-ckeck probe in and set it to ring alarm at 148*. let chops set for 10 min. and start eating great food. I found out that cherry wood adds to great color and smoky taste

    MR H,[p]I often do a mix of cherry and hickory..... It's excellent on pulled pork, ribs, tenderloin, chops, pretty much any kind of pork. [p]QBabe
