Adjustable Rig Question: Brisket Setup

Cooking two briskets this weekend. Had bought an 8# flat but found a 12# packer in the freezer so am going to cook both.

I'm going to trim the packer and should be able to get it pretty close to the weight of the flat. I'm thinking putting the flat on the bottom and the packer on top which will hopefully allow for some of the fat from the packer to render onto the flat.

Is this the best setup, any other suggestions?

    my first choice would be to keep the packer whole and separate point from flat when flat hits 195ish. At 12 pounds, the packer should fit on the lower grid with flat above. Packer on lowest bracket setting, flat on top of rig with bge grid. spider with stone and drip pan for two grid cook set-up

  • This is the first time I'll be using the adjustable rig/spider/stone for a brisket cook. 14-16#.

    Should I use it or the plate setter regular grate method?

    If this is your first cook on the Rig, maybe better off starting with an easier cook than a brisket.

    If you are comfortable using the Rig, choice is really up to you on the set-up. I like the Rig for couple reasons with a single grid cook: 1. several set up options with the stone and pan; 2. if I need to get at the lump, it's a quick move to lift the loaded rig out and cooker is empty.
