Keeping ribs warm for 2-3 hrs

Unknown
edited November -1 in EggHead Forum
Well, 6 baby backs direct on the egg now. It looks like we will have a timing issue later today (doesnt everybody?) and will need to keep them warm for 2-3 hrs. Ive ready a bunch of posts re: wraping in foil, etc but I wanted to know can i do this for 2-3 hrs? Will they steam in the foil and lose their consistency, etc? Ive also heard about using an igloo to keep temp up. Im planning to throw them on the grill for 5 mins or so right before eating...[p]Any thoughts would be greatly appreciated!

    GigemAgs,
Wrap them in film 905 & put them in a styro foam cooler. Film seals them better than foil. It will stand temps in the 200 for keeping them on the grill.[p]

    Nessmuk,
You shouldn't use Saran wrap for heated products. There are some nasty chemicals that are released when it is heated. It is OK to use for chilled products, but whatever makes it supple, also makes it bad when it is heated.[p](From a chemist friend who makes her living testing plastics)[p]Mike in MN
