I am looking to cook a brisket and some other stuff using my adjustable rig with the spider. What size pizza stone do you use with the spider for a large? Also will i need to refill with lump during the cook since i will not be able to fill the firebox? Any tips would be great thanks.

I believe it is the 12" stone. Why would you not be able to fill the firebox? Your spider can be flipped you know.

If I flip the spider over then I don't have room for a drip pan.

I fill the lump to the top of the fire ring, spider inverted, 14" deep dish Stainless Steel pizza pan (first picture - wrapped in foil). Then the adjustable rig, grid, grid ends are wrapped with foil to protect the brisket parts hanging over the pizza pan coverage area (second picture). Then the brisket.

I don't see any reason to use a pizza stone but you can.

All in and all, pretty simple.

for a one grid cook, no need for the spider. use the brackets on the rig's lowest bracket setting, 1.5 inches above the top of the fire ring and put your stone/pan on the crossbars. Grid on level 4.5 or atop the rig. When I'm lazy, I'll just put the pan on middle bracket setting.

Thanks for the help everyone. I wanted to use 2 grids so I can cook some fatties too. I ended up being able to squeeze the plate setter inside the rig and then put the drip pan on there and still use 2 levels of cooking surface and fill the firebox.
