Long time member but I do not post much. I have to tell you about the best cook of my life. I put on two 10 Lb pork butts and stablized them at 9am. Big butts for my area. Now I know I had all day to mess with them. Well I did not. You could have taken the dial and just painted it with nail polish at 250 Deg. I just stirred the ash and added lump and fired it up. It has remained consistant for 10 hours. I am at 185 and just waiting. No blowing, no stiring the coals no nothing. I can't keep my HOUSE that consistant. What a wonderful cook. I actually had the small out to cook chicken and had more problems with that than the butts. WOW! I guess we deserve a good cook once in a while.
