potentially dumb wing question

When Egging wings, do you folks always use drummettes (that's what I've always done), or is the entire wing ever used? Or, do you buy the entire wing and snip off the tip before grilling. I'm sure the cost per pound won't differ much if you consider the waste after the surgery. [p]LR

    I like to cut the tips off and save for broth, then cook the rest in one piece. If you cut into drummettes then you lose the nice effect that the full sheath of skin has for holding in the moisture. Plus it is cool how they look like little deer footprints![p]Hee

    Lawn Ranger,[p]We usually get our wings at Sam's Club and they are whole. We snip off the tips and save for broth, then cut the drummy and the other piece (haven't got a clue what it's called) apart. So, you get two pieces from one wing....[p]Tonia

    Lawn Ranger,[p]I buy whole wings and remove the tips and the skin flap (healthy reasons). This makes them big enough to not fall through the grill and by giving a gently bend of the joint, you can tell when they are done.[p]Spin

    I buy the individually frozen ones at Costco. Wings and Drummettes, no tips. 10lbs=$12.[p]Mike

    <p />Lawn Ranger,[p]I'm one of those who love KennyG's wing recipe. I will double the ingredients and add a very healthy shot of tobasco and a little cayenne for an extra kick and then marinade overnight. [p]I have also combined that recipe with ChefRD's Hot Wings recipe for a real flavor bomb.[p]I get the biggest, fattest wings you can find and snip off the wingtip. I feel leaving the rest of the wing whole for the cook makes for a crispier outside and juicer inside.[p]The photo is of ChefRD's wings.[p]Lifter is doing just fine and sitting here at my desk.

    Lawn Ranger, I buy the whole wing, use my cleaver (on a wax paper covered chopping board) and split them into the tip(I throw away or use for broth), the fore-wing (I cook) and the drummette (I cook). I do this because some folks like the drummette and some like the fore-wing. However, after seeing NatureBoy's and KennyG's posts, I may just have to give those methods a try.

    i second the costco 10 LB bags. .. great deal, and they are usually really big and meaty wings. . .they are what i used for the mandaran wings at the waldorf eggfest. ..(a side benefit is that they come in a re-sealable bag - i threw the marinade right in the bag with the frozen wings, left them sit overnight, and by morning they were perfectly defrosted and ready for the grill). . . .

    Got the medium fired up and getting ready to do salmon fillet,raging river rub and then Salmon with Dijon Bourbon Glaze by Gretl except I use rum in place of the Burton.[p]Have a great weekend.

    When I'm going to do a batch, Costco is where I have had good luck finding the fatter, higher quality wings.[p]Salmon sounds really good....... I'm off for dinner in Lancaster and have no idea what's for dinner.[p]Have a great night...... I'll raise a vodka to you.[p]John

    Hope it is cooling off for you out there.[p]I get my wings at Costco usually. They are pretty consistently fresh and good. Not sure what they feed 'em though. But they taste good. After visiting the Poconos, and eating Farmer John's pasture fed chicken, I am kinda wishin' I could get that on a regular basis![p]great weekend to you.
