Pulled Pork for a luau?
Work crew is having a get-together and the host is calling it a luau. Must be because she owns some tiki torches or something. Anyway, many of these folks were at my house for the 4th and of course loved the bbq. They're requesting it again. What would be the suggestion for giving it a Hawaiian flair? Add some pineapple...some kind of hawaiian sauce instead of bbq? What else?

Maybe if you wore a grass skirt while cooking....just watch out for the flashbacks...heeeee!! [p]Seriously...how about doing some grilled pineapple as a side dish. Or maybe some sort of a pinapple salsa...just do a google search for some recipes[p]~nikki

I lived in Hawaii a very long time ago and there are 3 things I remember from luau's (real ones, not tourist trap productions).
1) They always had coconut cake as one of the deserts.
2) You may have to do some research on this, but of course, they always had poi. I actually have seen taro root in my local grocer, so you could investigate making poi. You don't have to make much, because nobody likes the stuff. :-) They used to make it simply by pounding it with a stone in a large mortar/pestle sort of thing, adding a little water as you go.
3) They always had some sort of thing that was clear spaghetti noodles and little strips of raw fish. I can't remember the name of it, though. Some research might find this out.[p]I'm sure if you search on luau on the web, you should find some more good ideas. Good luck![p]TNW

I searched on luau and it brought to mind another dessert that they always had at luau's: Haupia, a sort of coconut pudding. Search on it and you'll find recipes. So far I can't find any reference to the noodles with raw fish....[p]TNW

RG,check out www.hisurf.com for good menu list for a luau.I will send you a recipe later when i get home for the pork.Besides the brine solution the flavor comes from KIAWE charcoal with some guava wood smoking chunks. Also some banana stalks are a major part of steaming the pig( placed on the coals with guava wood).Folks can't get this stuff-so they thrw in the towel and use liquid smoke(sinful)
