<p />These were the lucky guys to be grilled and eaten Saturday night: four 1-3/4" thick (about 1 lb each) USDA Prime NY Strips.[p]Here they are after being seasoned with olive oil, kosher salt, and pepper (no Porter mustard this time):[p]3384%3B85523232%7Ffp3%3B%3Dot%3E2329%3D827%3D97%3B%3Dxroqdf%3E2323437725454ot1lsi[p]Here's the dome temp before searing (hot):[p]3384%3B85523232%7Ffp3%3B%3Dot%3E2329%3D827%3D97%3B%3Dxroqdf%3E2323437724%3A34ot1lsi[p]Here's what the coals look like before searing (lava):[p]3384%3B85523232%7Ffp3%3B%3Dot%3E2329%3D827%3D97%3B%3Dxroqdf%3E23234377248%3C%3Bot1lsi[p]Here are the steaks being seared (after first flip):[p]3384%3B85523232%7Ffp3%3B%3Dot%3E2329%3D827%3D97%3B%3Dxroqdf%3E2323437725456ot1lsi[p]Here they are resting for 20 minutes post-sear:[p]3384%3B85523232%7Ffp3%3B%3Dot%3E2329%3D827%3D97%3B%3Dxroqdf%3E2323437725455ot1lsi[p]And here's what one looks like after roasting at 400 degrees:[p]3384%3B85523232%7Ffp3%3B%3Dot%3E2329%3D827%3D97%3B%3Dxroqdf%3E2323437724%3A35ot1lsi[p]This one was medium-rareish (sorry for the blur):[p]3384%3B85523232%7Ffp3%3B%3Dot%3E2329%3D827%3D97%3B%3Dxroqdf%3E2323437724932ot1lsi[p]This one was closer to medium (again, sorry for the blur):[p]3384%3B85523232%7Ffp3%3B%3Dot%3E2329%3D827%3D97%3B%3Dxroqdf%3E2323437724%3A33ot1lsi[p]These were really good. Only downfall was that I didn't let them come up to room temp before searing, so they were slightly less tender than usual.[p]TRex
