My butcher has Choice Semi-Boneless Rib Roasts

They are on sale. $8 a pound and it says "1-3 ribs". What am I looking at here. Is this prime rib, as in the stuff people eat on New Year's, etc. Or is this just a somewhat boneless hunk of uncut ribeye steaks? Or is it the same and by preparing the cut whole instead of slice you achieve prime rib instead of sliced ribeye steaks. I am lost as usual

    Sounds like semi pregnant, either it has a bone or not IMHO.
    I paid in Publix just before Father's Day $5.99 for a prime rib with a bone. The one I bought was 2.6 pounds, 1 bone.

  • well, if its "semi" boneless, it may still have the rib bones, but he may have cut off the "chine" bone part. ..thats not a bad thing. . ..even if the bones are completely removed, you should still have a nice rib roast. ..yes, this is "prime rib", only its not "prime meat". ...probably choice at best, may only be select, but probably choice....you can cut it into steaks if you want, or you can roast it whole. ..here is a link to how i prepare them (just skip the part about wrapping in fat). . .it will turn out good so long as you don't over cook it. ...

    Yeah it is Choice. My butcher (in the store I go to) is awesome. I always trust their meat, I was just unfamiliar since I only usually handle this cut sliced. Thanks for all the info.

    You can make "Standing Rib roast" outta that.You can slice and make steaks outta that.You can ONLY have "Prime Rib"if the cut of meat is graded PRIME.The same cook,the same method but only PRIME meat is supposed to be called "Prime Rib",all other cuts are rib roasts.It's all Gooood! ;)

    As MadMax said the chine bone was probably removed. Makes for an easier slice once the roast is cooked.
