Got some trout in my freezer and I was wondering if anyone had any ideas for them . Thanks

Here is a link to a conversation on Snapper. You can prepare the trout the same way.

Terry on P.E.I,[p]Defrost 'em and sprinkle on season salt. Throw some green onion across the grid [so the trout won't stick] and smoke the trout for an hour at 250.[p]That's it. They fillet after cooking really easily -- just cut off the tail and slide the knife along the spine toward the head. The spine lifts right out.[p]

Prof Dan,[p]There you go again! Last time you mentioned this technique, you *almost* got me talked into "calling in well" at work and breaking out the fly rod. Now I'm off to check the weather over at the river again... <g>[p]Seriously, I can't wait to try this out on my egg. I've never had *bad* fish from my egg, but I do tend to get it all stuck to the grate. I love the idea of using the green onions. Probably makes for an amazing taste too, eh?[p]Thanks for the idea!

I do it the same way as Prof Dan with the addition of alder wood for smoke. That really adds a nice, mild smoke flavor to the fish.

bc,[p]Last night we didn't have any green onion. So I just used lettuce leaves. Worked fine. Same with celery stalks.[p]I have never had fresh-caught trout -- all we get is the farm-raised stuff at the market. I can only imagine what the real thing tastes like.

*gasp* never had fresh caught trout?![p]Eghads! You must go catch some fish Professor! I don't have any real proof, but I believe "fresh caught" and "store bought" are actually completely different species of trout. (smiley)[p]bc[p]
