Jim Kemp,[p]I recently did a 4 pounder. For prep, I used just kosher salt, pepper, and olive oil. First seared it on all sides at 800 degrees, rested for 20 minutes, then cooked at 300 degrees or so direct on a raised grid, flipping once, until I got to 135 internal in the thick part. This took about 45 minutes - 1 hr I think. At the end I melted some garlic butter over the top. It was incredible.[p]TRex
