beef ribs

I just got my big green egg (last saturday) and so far I love it
I have smoked some pork ribs with the directions that came on the video they came out good but not great.But I am sure I will find a better method.
My next challange is beef ribs and I would realy love some pointers on this since the only way I have ever cooked them is in a crock pot in barbque sauce. Thanx Glenn

    <p />Hey Glenn, and welcome![p]The key to a good beef rib cook for me is to get really meaty ones from either choice or prime.
    If I see beef ribs with a thin layer of meat on them or a load of fat then I'll pass them by.
    If you have a butcher nearby, it's worth it to get in good with him and he will keep you in good ribs.[p]I will cook them pretty much the same as pork spares.
    Rub them down with your favorite spices or just plain salt and pepper. Onto the cooker..... (I'd suggest indirect over a drip pan as they render a lot of fat) and cook around 230-250 dome until the meat starts to pull back from the bone.
    You can also check for doneness by gently spreading the rib bones..... if they feel like they are about ready to release from the meat, they are done. [p]Prime beef ribs have taken me as little as 3.5 hours to cook and choice grade as long as 5 and even 6 hours to cook.[p]I love beef ribs..... they are worth it and the flavor is amazing.[p]John[p]

    I use these direction, below, from The Smoke Ring. Beef ribs are tough to get right, no pun intended.[p][p]One thing to remember, if they are too tough you have not cooked them long enough.[p]Sloooooow and loooooooow[p]Good Luck!

    Your advice is sound, as usual. And that pic is mighty purdy. I would just wish to stress the whole, they be done when they be done aspect. I have had some take 6 hours as well but that doesn't mean that they will all be done in thattime frame. I know that you know this but thought that I would mention to our new egghead. They take time.     Hey Matt,[p]Dat's a very good point you make and another one, I know you know I know :~), would be to avoid the temptation of raising the cook temp to speed them along........ like you said, they need time and cooking them hot will not make a better rib.[p]I'm off to bed, big day tomorrow........ g'night, mang.[p]John[p]
