What should I cook first? I thought about searing steaks tonight, but I was told to take it slow and not go right into high temp cooking until I get used to the grill. What do you think?
Also, I'm doing ribs tomorrow. Do you recommend the plate setter when smoking ribs?

Yes I do recommend a plate setter, or if you do not have one you will be better off with some sort of flame/heat deflecting contraption.
Ribs should be cooked indirect. -
Although it is not proven to help and is not in the official instructions, almost everyone will tell you to play it safe and "break in" your gasket by not going over 400 degrees for your first half dozen cooks. Therefore, I would not do steaks.
I did individual chicken pieces for my first cook as I wanted something simple and inexpensive. Spatchcock chicken (your Egg instructions I believe call it something else) where you cut the back and flatten the chicken on the grill is very popular.
For ribs, I follow the recipe in the manual (backyard championship ribs) and have found them to be outstanding. So, yes you use the plate setter except for the last step of actually grilling for a few minutes.

Yes spatchcock chicken for first cook you will love it, best chicken ever, but you need a platesetter for the indirect cook. good luck with your EGG you will love it.

Check out my website linked below, you should be able to gain some insight on different cooks...You should have gotten a DVD with your egg...WATCH IT...it will answer many of your initial questions..lots of people recommend a spatchcock chicken as a first cook..The Naked Whiz's website will explain that in great detail..along with any other question the DVD didn't answer..it is well worth a visit..Welcome to your new life..

These are some pretty easy ribs to do and they are out of this world but like others have posted you will need a plate setter or some kind of contraption to get indirect heat.

I do CarWash Mikes ribs all the time and they are great. Still haven't did the spatchcook chicken that is next on my list. Happy Egging
