Hey all,[p]An answer to the trivia of why some meat cuts are called what they are - heres the Boston Butt story...[p]"In late-18th-century New England, some pork cuts were packed into casks or barrels, known as "butts," for storage and shipment. The way the pork shoulder was cut in the Boston area became known in some regions as "Boston butt," a moniker still used today almost everywhere in the United States, except Boston." - Gourmet Magazine Article, date not remembered.[p]Just put this in the FWIW column, thought it was interesting.[p]Troy[p]

That is a great piece of info. Now all we have to do is figure out why the heck they came up with the name "country ribs" to describe thick slabs cut from everywhere but the ribs.[p]Thanks for the tidbit
