How is the placesetter used? My understanding is that it will help in indirect cooking.

  • Mark,
Depend on what you're cooking. "Legs Up" with drip pan in the middle and grill on top for chicken, briskets, butts, etc. Grill first, "Legs Up", pizza stone on top for pizza, clazones, etc. You'll get the hang of it![p]Kelly

Whoops, make that second one, "Legs Down". Brain farts this early??[p]Lord.........

  • Kelly Keefe,
sometimes, when i don't want a drip pan cause i'd like the drippings to 'smoke'. .. i'll simply wrap the plate setter in aluminum foil, and set it in feet up .. .that way it stays pretty clean. . .[p]i also find that when you put it in the egg, the extra ceramic mass causes the egg to lose temps for a little while until it heats up. .. so even for a 'lo and slo', i have to open the vents up a little more to get temps int the 210 - 250 range, then readjust back down. ... .that's just my personal experience. . .[p]like kelly said, its a great tool, have fun experimenting with it. .
