After a high temp cook, I use a wire brush to knock the crud down....look at it more as "seasoning" for the grill. [p]Mike in MN

Marilou, a good hot fire should clean it out for you. It is best to get rid of that greasy build up. Last week my plate setter (which I had not properly wrapped while doing too many Boston butts) started burning while I started a hot fire to cook pizza. When I finished everything was clean (even white) but it was interesting watching flames come off the ceramic. Don't recommend it, will try to protect the surface of my platesetter a little more in the future.

I have a layer of aluminum foil on my platesetter. It protects it from any gunk or moisture that may drip on it. My broken pizza stone is bare though...and gunky...I don't use the broken one for pizzas, just ceramic mass.[p]Mike in MN
