Stuffed Chicken

Hebert's Boneless Chicken stuffed with potatoes jalapeno, bacon and sour cream seasoned with Hebert's seasoning and some Adobo Seasoning Cooked indirect at 375 for 1.5 hours. I threw in a hickory chunk and some apple chips for a little more flavor. This was by far the best chicken I have ever eaten.

Wow, Eddie, that looks awesome. Just today I was asking my wife what I should cook this weekend - maybe I'll just find an excuse to drive to Maurice.
BTW, I passed through Pensacola a couple of times recently - once on the way to Destin (on the way to Disney), and to stop at Firehouse Subs on the way back.

Part of that was completely accidental but I will repeat the mistake next time. I brushed it with EVOO before the cook (on Purpose). It had about 10 degrees to go. I did not have the daisy screw at 6 like I usually do and the daisy completely opened and I did not notice. The temp ran up to 500 degrees and did a lot of justice to the skin. I could' have done it better if I had tried. :laugh: The skin was perfect.

That is some sweet looking chicken. The skin looks picture perfect. Crisp and very sweet with the sauce.
