greek style ribs

Does any one have suggestions on grilling "Greek Style Ribs"? My neighbor, who has more money than God, bought a Weber Stainless Steel Grill the size of Texas and made Greek ribs on them a couple of night ago. Good flovor, but tougher than shoe leather. I know the egg will kick his but but unsure of the spices.

    Got this from About.com

    Greek Seasoning Rub

    2 tsp Dried oregano
    1 1/2 tsp onion powder
    1 1/2 tsp garlic powder
    1 tsp salt
    a tsp cornstarch
    1 tsp fresh ground black pepper
    1 tsp beef-flavored bouillon granules
    1 tsp dried parsley flakes
    1/2 tsp ground cinnamon
    1/2 tsp nutmeg

    Combine all ingredients and store in an airtight container.

    When I Googled "Greek Ribs Recipe" I got 1,650,000 hits. I'm betting there's one or two grilling recipes among them.

    Maybe it's not the tool, but the skills. Well, maybe the tool has an impact. Tough ribs tells me not cooked enough. No doubt, any grill/smoker can produce good ribs, if cooked right. You can even get good ribs in the oven. I don't know what Greek Style Ribs really means, but if it's the spice and flavor then the rub and smoke wood would impact the result. No doubt you will get your answer here, if you find a good result I'd love to read your post and maybe see your pics.

    I ran across this one just a few recipes down. It calls for a period in the oven followed by the grill.

    Alekos Greek Taverna's Greek Spareribs Recipe

    Submitted by: Gennyblake copycatrecipearchive

    Ready in: 1-2 hrs
    Difficulty: 3 (1=easiest :: hardest=5)
    Serves/Makes: 4


    Ingredients:
    2 Racks of Danish baby back ribs
    1 teaspoon Seasoning Salt
    1 teaspoon Pepper
    1 teaspoon Salt
    1 teaspoon Oregano
    1/2 cup Cup lemon juice


    Directions:

    1. Combine all ingredients in a 13x9" baking pan. 2. Preheat oven to 400F, and cover pan with Tin Foil. 3. Cook for 1 1/2 to 2 Hours. 4. When completed, remove ribs and grill on barbecue. Baste with olive oil, lemon and oregano while on barbecue. 5. It isn't necessary to barbecue, but it adds a nice flavor, and gives the ribs a nice colour.

    I think the oven time could be swapped for a dutch oven on the egg no problem :)that is how we do our spareribs and southern style ribs

    Good idea... Then take 'em out of the Dutch Oven and place on the grill as in the recipe.

    I'm really curious as to how tender they can get in such a short time cooking.

    i think the cooking time is short in that recipe because its calling out for danish style ribs, if you ever see them, back away from the counter and run. ;) scrawny tiny ribs.

    If you're going to share them with him why not see if he will give you his recipe??? That way you'll be comparing apples to apples. Just a thought.

    Coming from a "real" Greek this is what we use:

    2 tablespoons of Olive Oil
    1 teaspoon Fresh Garlic- minced
    1 teaspoon Pepper
    1 teaspoon Salt
    1 teaspoon Oregano
    1/2 cup Cup lemon juice

    Combine all ingredients and marinate for 2-3 hours. This marinade is used on all roasted meats including spring lamb for Easter as a basting sauce.
