When we were off exploring the area that we are having the work shop in August in we stopped at a great little Cafe for lunch. I had a nice sandwich called the Italian flag. It was on sourdough bread but I used sourdough rolls, pesto, fresh basil and slices of tomatoes. grill to melt and meld the flavors. this was great and if the tomatoes had been fresh picked instead of like rocks mine would have been very yummy!
I used two cast iron pans to press them down.

My wife would like this. Were the pans hot so they toast the bread?

Hi Barry, they were hot to the touch but not searing hot. I think I would do the slices of bread with a light brush of butter like the Cafe did next time. thin crisp crust was good. the rolls took a bit to get the cheese melted. and got a little hard. but they were really good!

Hi Faith! they were good. we had left over broc soup from the night before with them and it was a nice dinner. just wish it would warm up up here so we can eat out side :(

That looks awesome. Did the heat from the CI skillets cook the bread and crisp them up? You have given me an idea for this weekend.

Wish we could trade some weather Julie, it was a steamer here yesterday. I went out to BBQ some chicken yesterday and made the mistake of sitting in a patio chair. On the surface it looked dry, in reality I was sitting on a huge sponge. Ah well, at least the clouds are spectacular down here this time of year.

The sandwiches look great, a testament to your ingenuity and the versatility of the egg. You've got me thinking that Cuban sandwiches made with pulled pork on the egg would be classic.
