I picked up some Copper River Salmon, $15.99/lb. for the sockeye so I couldn't pass it up. It was delicious! I prepared it with Dizzy Pig Raging river and used his Maple Salmon recipe off the DP website.

Served with some asparaus brushed with EVOO and lemon pepper & baked sweet potatoes with butter and pineapple head.

For dessert I grilled some pineapple with some DP Pineapple head. I brushed with some of the leftover butter/maple syrup sauce from the salmon and that really put it over the top. Served warm with some Haagen Dazs Vanilla Bean ice cream.

And "yes" Skype boys I really did cook this. :P
