I picked up some Copper River Salmon, $15.99/lb. for the sockeye so I couldn't pass it up. It was delicious! I prepared it with Dizzy Pig Raging river and used his Maple Salmon recipe off the DP website.

Served with some asparaus brushed with EVOO and lemon pepper & baked sweet potatoes with butter and pineapple head.

For dessert I grilled some pineapple with some DP Pineapple head. I brushed with some of the leftover butter/maple syrup sauce from the salmon and that really put it over the top. Served warm with some Haagen Dazs Vanilla Bean ice cream.
And "yes" Skype boys I really did cook this. :P

Perfect dinner, in my wife's opinion. Well, me too. Love the Copper River salmon. Well, we love wild salmon so much more than the farm raised, even if it's not from the Copper River. You have given me something to strive for this summer. Great pictures, I'm almost there.

You know that I will, while we are driving down the highway... I am pretty sure that he has a bright yellow Hummer, but not sure, so not that hard to spot...

Thanks! I wasn't going to break down and buy the Copper River but for the price I couldn't resist. The prices are pretty low this year.

I did. The running total on the La Bomba requests is about 8 cases and I'm working with Aurora to try and figure out a better way of getting them to the states. If I can't figure that out with them, I look into what it will take to send a larger batch like that personally.
Perhaps I could get someone down there to act as a distributor. Maybe one of the members who already run mailhouse operations like the Nature Boy or Big Un would be willing to take that on. Particularly if Aurora handles the cross border part that would work best I think. Free us of the La Bomba tyranny once and for all.

The dessert was great. I put the PH on the pineapple and grilled it and then i uses the leftover maple butter and basted the pineapple the last 5 mins. With the Haagen Dazs....yum!!
