I cooked some'en:JL Roasted tomato w/thighs

My wife was going to just do some bbq chicken thighs tonight but I wanted something differant. On top of the farm, OT at work and run last weekend I have been working on a Japanese garden. Thanks to bill and his encouragment along with a bunch of literiture from him it is starting to come along. Today I went and got my first stone 825 lbs and set it. Will add more to create a dry water fall and stream with the moss I have been cultivating on right side and raked white gravel on left. Vegitation will have to be planted next spring but rocks come first. Only 1/4 done but I think its starting to shape up. This is off the back of DP'S.

By the time I bought the rock and set it I didn't have time to run to town so imprevised.Hear are the raws.

I saltaed 5 cloves of garlic and 1/2 onion in sesameseed oil till light brown and tinder and removed to a bowel

Next I deboned chicken thighs and dusted well with Tony's and cumman, spooned some of the garlic/onion on and added two fresh sage leafs rolling up and pinning with toothpicks. Gave a dusting of pepreka,cracked pepper and Main seasalt.

Cooked at 325 direct with EVOO in cast till almost done.

Removed from cast and poured off most of the fat, scrapped the stuck on bits off and added shrooms till they started to cook.

Added a can of roasted tomatoes, 1/2 Shiner Bock beer, the rest of garlic/onion mix and the chicken. Simmered at 300 for another 30-45 min. with plenty of presimmon wood.

Wife roasted corn in oven. (Where's that small Egg at?!!)

And served over pennie pasta.

Jake's proud of the new Le Creuset my wife snagged at Tuesday Mornings!! :woohoo: I can see some'en good comming up.

Put out a ton and half ammonia yesterday and got a good rain today. Perfect timing...for a change!lol Back for four 12HR. graveyards in a row tomorrow night so will be AWOL for a bit but will check in as I can.

Thanks everyone! Supper turned out great and the cool rain made a nice fire in the chemeka fill good. Sat out by it till late. Was most of the day getting the rock home on trailer and set but the Kabota sure helps out!! :laugh:
