New overnight cooking

I've cooked jerkey at 180-190, but overnight the lowest is 230. I fill the egg up with lump about halfway up the fire ring. Last time it was almost to the top of the fire ring. You want to be sure that you don't run out, so use as much as you like.[p]I set my airvent wherever they end up to stabilize at the temp I'm using. I don't set the airvents and then walk away. The lower vent is usually about 1/8 of an inch open and the holes on the daisy wheel are about 1/3 of the way open. Here's a link to a writeup on my first overnighter...[p]TNW
