Fresh shrimp, I peeled the main body and left on tail and head. Statute garlic, green onion, hot peppers, firewalk & sea bass put on top of some of the shrimp. I did not like the texture of the shrimp, mushy. I have cooked heads on before but never grilled.

Looks great. Usually when they are mushy they cooked too long.

Yes, I headed 200 hundred pounds when they came in. FUN,FUN They were in the water on Tue but did not cook last night. Some of them do have roe this time of year.
-
Susan,
They look good anyways. I think they just weren't fresh.
Sorry about that.

I should have added, notice the 'whiskers'? These will usually not make it if they have been frozen

Well, Susan, if anyone....you would know how to cook them. We have some that Randy had flown in from Louisiana...with the heads on, in the freezer yet. Maybe it's time we do a low country boil with them. We've also done them grilled with some cocktail sauce.

Sorry, Susan for saying they may not be fresh while you were typing at the same time that you just got them in fresh! Sheeesh!
So what's the answer here? Why were they mushy?
You are the Queen of mussels, don't forget.

Wish I could GET shrimp like that here, lamndlocked in Austin Susan. Looks amazing!

Susan....That meal looks absolutely fantastic!!! What a shame the shrimp were mushy! That has happened to me a couple of times, and it always seems to be when the shrimp are heavy with roe. I don't know it there is a definate connection.
So sorry the meal didn't come out as expected. I hope the sea bass was more to your liking.
Thanks for sharing those awesome pics! -
Probably was the roe, I will do a test this week!!!!!!!!!! Free caviar go figure
