Sooooo Good Salmon

Hi Ya'll[p]Did up some salmon this morning like this. Got a good salmon steak from Costco. Some lime juice on one side, then some lemon juice on the other and generous portions of Tony Chacerie's rubbed all over.[p]Fired up da BGE, threw on some mesquite, threw on the salmon (in a cage), and put a #1 Mikey T ring.[p]For 20 minutes, the temp held from 100° to 150°. Then turned the basket over for another 20 minutes. The temp got to about 180°.[p]Took the salmon off, got the temp to 400° and put the salmon in for another 1 1/2 minutes per side.[p]Wife and I like heavy smoked flavor and this did not disapoint us in the least. Flakey, moist, tender, and lots of smoke and salmon flavor.[p]Later[p]Cajun
