Overheated brisket

Started 6# brisket at 7:00 this morning. About an hour ago, my temp got away from me due to too much daisy wheel slide opening and got to 400 degrees, and internal of 190, but 185 in another part. Is this going to make the brisket tougher? I am working to get temp down and have gotten down to 320. Still trying to get it lower. I had cooked at 250 most of the day. Thanks, Ray Price

    I would take it off right away, wrap in foil, and place it in a warm cooler for an hour or so, Ray. It should come out perfect. The internal temp will rise to 200 while it is resting. I think if you leave it on until 200 and then wrap, it will overcook.[p]Jim

    I agree with JSlot. You may have cooked out a lot of juices so I think I would maybe add some moisture while in the foil (beer, coke, water, apple juice, etc). That may cool it down in the short run but in the long run it may replace what cooked away. [p]I had one get away from me one time so I just took the brisket off and let it rest while the Egg cooled down. I put it back on like nothing happened and it turned out okay. But mine still had a long way to go to get to 190 degrees internal.[p]No matter what, you can always chop it up, add sauce and make some good BBQ sandwiches.[p]Good luck[p]Spring Chicken[p]
